Things I have actually made

Last week my “unless” was the sudden tragic loss of a dear friend. He was only 32. I went to his funeral. I watched his casket lowered into the ground and I still don’t quite believe he is gone. Wherever you are C, I hope you are at peace.

Sometimes people stop cooking when something horrible happens, but in my case I’ve been cooking with an almost manic frequency. A quick list of some things I’ve made in the last week:

Cream Cheese Carrot Cake Muffins: King Arthur Flour Made these this morning for my brother and his new girlfriend. They spent the nice in my brand new guest room. Unfortunately they had to leave in a hurry so I don’t know how they turned out. They looked good!

Olive all’Ascolana recipe on, I made this as an appetizer for an impromptu dinner party last night and they were devoured. Really tasty!

 Yotam Ottolenghi’s Sweet Corn Polenta with Eggplant Sauce I made a variation of this for the entree last night. I am obsessed with the fresh corn polenta. This is the fourth time I’ve made it in two weeks.

The Two Bite Club: Zucchini Tots Breakfast yesterday. I used summer squash fresh from my mother-in-law’s garden. They did not want to come out of my mini muffin pan even though it was well greased.

Retro Recipe: King Ranch Casserole Recipes from The Kitchn | The Kitchn, Lunch and dinner day before yesterday. I’ll be honest…I only made this because I has some off tasting (but fine!) rotisserie chicken to use up. I also used up a freezer burned bag of mixed peppers and I’ve learned my lesson about buying any frozen veggies other than broccoli and peas. I don’t like ’em and I don’t use ’em. As for the recipe itself, I’m sure it’s a lot better if you use good ingredients but mine was perfectly good with a bunch of salsa on top.

Bacon Maple Muffins with Brown Sugar Crumble Little Leopard Book, Made these last week sometime. I ended up freezing most of them because they are a little dry but I’m sure they would make a good breakfast for those mornings you need to grab something and go.

Fried Radicchio with Honey | For The Feast Also made sometime last week when we just wanted a light dinner. Hubby and I split half a head because we weren’t that hungry. I mixed some balsamic vinegar into the honey to drizzle over the top. It was delicious!

Cheddar Chive Muffins | Tara’s Multicultural Table I’m saving the best for last. I made these three times in the last two weeks. I loved them. They were best the first time when I had a little leftover hollandaise sauce (about 2T) and I just added it into the batter. What else can you do with leftover hollandaise sauce?

Eggplant Parmesan recipe on And finally, the best eggplant parmesan I’ve ever had. So delicious. And I don’t even like eggplant!

This went a little longer than I planned. I’ll be back with queue no. 2 tomorrow.


So, how did I do?

Two posts today. First, because I like completion, a follow up from queue number one. Here is the breakdown of what got made and what didn’t:

  1. Baked Grapefruit with Meringue: Made it and loved it!
  2. Cheesy Potato Breakfast Casserole with Cheddar & Tomatoes: Nope, kind of forgot about this one, back to the bottom!
  3. Creamy Pumpkin Potato Salad: The more times I read the recipe the less I thought I would like it. I’m still intrigued, but I don’t feel like taking the risk of wasting all the ingredients right now.
  4. Mojo de Ajo: I will make this…but not yet, maybe I need to start a back-burner queue!
  5. Jalapeno Popper Fettuccine Alfredo: Did not make and don’t plan to. Reading the cooking instructions on this recipe made me realize that if I wanted something-Alfredo I was going to make a proper Alfredo sauce, and this recipe just didn’t cut it for me.
  6. Pressed Picnic Sandwiches: Every time I’m at the deli now I’m looking for quality Italian meats, when I find some I’ll make this for sure. Back-burner.
  7. Orange Pistachio Muffins: Nope, maybe someday, but I’ve made a lot of muffins lately…
  8. Brown Sugar Meringue Crisps: I froze the egg whites in question so I don’t think I’ll bother with these right now. Also, did you know about using egg whites to clarify stock? Ask me sometime 🙂
  9. Red Pepper and Bulgur Soup: I did make this, although it looked nothing like the recipe by the time I was done. It was spicy and good, but not especially memorable. One of those ‘dinner soups’ that hubby and I eat for a couple days but don’t want to eat again after.
  10. Pizza Logs: Nope, lost any interest in these. Probably won’t even keep the bookmark.
  11. A Bowl of Red Chili: I was so psyched to finally make this one. My parents were coming over for dinner and it seemed like the perfect excuse. I thought  it was delicious, but hubby likes beans in his chili.
  12. Homemade Milano Cookies: Nope. Maybe sometime, I’m not in a hurry.

So, 3/12. Oh well, on to the next.

I woke up late this morning. It was a late night. I was groggy from the sleeping pill I took to kill the knot of anxiety that tightens in the back of my throat when I can’t stop thinking about what I need to do/what I should have done.

It was too late for breakfast, but I made it anyway. Because I thought of you. It’s nice to have some extra motivation even if it’s only temporary. Resolutions don’t last. They’re a lot like meringue actually: looks impressive, dissolves on impact.

I recommend making this one. Hubby thought it was too tart, but I thought it had the perfect balance of tart and sweet. The grapefruit was just a little warm so it was safe to dive right in. Plus it looks beautiful…like a present to yourself after a hard night. You can probably even convince yourself it’s healthy since it’s just fruit with egg whites…and don’t worry about the added sugar, you’d put it on your grapefruit anyway.

Welcome to one of the most boring and pointless blogs you will ever read. I have no idea what you are doing here. I have nothing to offer the world besides a bunch of sentences that begin with “I”. I suggest you leave now and never come back.

Still reading? Ok. I have about 1,075 bookmarked recipes. I just did a rough count. That does not include the 24 dinner party menus I’ve bookmarked in separate folders.

This is not a blog about trying to cook through all of those bookmarks. It’s impossible. A futile task. The queue will always be endless. But today, on August 20th, these 12 links are at the top of my queue. Here’s why:

  1. Baked Grapefruit with Meringue – A Thought For Food I’ve been making a lot of ice cream lately. I have some pistachio ice cream base chilling right now, BTW. So I have lots of egg whites to use up. I even bought a grapefruit this afternoon. There is a good chance I will actually make this one!
  2. Recipe: Cheesy Potato Breakfast Casserole with Cheddar & Tomatoes Recipes from the Kitchn | The Kitchn I’m a sucker for a casserole, especially at breakfast. I don’t have any normal potatoes though so the odds aren’t good on this one.
  3. Creamy Pumpkin Potato Salad I kind of hate pumpkin so I’m not entirely sure why I’m so intrigued by this recipe. I guess it’s so unusual that I might overcome my hatred of pumpkin to try it, but the odds aren’t good.
  4. Foodie Relations: Mojo de Ajo This is one of those recipes that will sit at the top of my list for a year before I finally make it. And when I do I will love it I’m sure. The odds are great on this one…if you can wait a year or two.
  5. Jalapeno Popper Fettuccine Alfredo | Chocolate Moosey One of those pinterest style recipes that make you feel a little bit trashy for pinning but sound so comforting that you know you have to try them anyway. I haven’t pulled the trigger on it yet because I don’t normally stock cream cheese. I have mascarpone, but I’m not sure it would work. And I just used up my jalapenos yesterday. Odds not good.
  6. Pressed Picnic Sandwiches – The Crepes of Wrath I’ll be honest, I put this in the queue because I wasn’t sure where to categorize it in my elaborate bookmark folder system. I don’t make a lot of sandwiches and I don’t go on many picnics. And I would have to buy 90% of the necessary ingredients to make it. Worst odds of them all.
  7. Orange Pistachio Muffins Recipe | mostly foodstuffs Hubby loves pistachio. And muffins. And I’ve baked 3 batches of muffins in the last week. We will either be muffin-ed out and I won’t make them, or I absolutely will.
  8. Brown Sugar Meringue Crisps | The Half-Naked Housewife Again, I need to use up egg whites. Not super excited about this otherwise. And I’m out of brown sugar.
  9. Had [Red Pepper and Bulgur Soup] | Zahlicious This I will make but in a heavily modified version to use up some bell peppers and the measly little bit of bulgar left in the bottom of a big jar.
  10. Emily Bites – Weight Watchers Friendly Recipes: Pizza Logs I am not on weight watchers. Very happy with my weight, thank you. But the idea of fattening this up is very appealing. I love to reverse diet food. And vegan food. Kind of a side note, but I always think it’s worth it to read a vegan recipe even though I would never make one as written…they combine things I never would have thought of.
  11. A Bowl of Red recipe on This has been on my list for quite awhile. It should be at the top…except for all the things I would have to buy to make it. But I’ll get there someday.
  12. Homemade Milano Cookies » The Live-In Kitchen One more way to use up egg whites. Probably the tastiest way. Odds are good.
