Baked Grapefruit with Meringue

I woke up late this morning. It was a late night. I was groggy from the sleeping pill I took to kill the knot of anxiety that tightens in the back of my throat when I can’t stop thinking about what I need to do/what I should have done.

It was too late for breakfast, but I made it anyway. Because I thought of you. It’s nice to have some extra motivation even if it’s only temporary. Resolutions don’t last. They’re a lot like meringue actually: looks impressive, dissolves on impact.

Baked Grapefruit with Meringue – A Thought For Food

I recommend making this one. Hubby thought it was too tart, but I thought it had the perfect balance of tart and sweet. The grapefruit was just a little warm so it was safe to dive right in. Plus it looks beautiful…like a present to yourself after a hard night. You can probably even convince yourself it’s healthy since it’s just fruit with egg whites…and don’t worry about the added sugar, you’d put it on your grapefruit anyway.
